Easy Vegetarian Meals for College Students

Even though I am not fully committed to being a vegetarian yet, it is one my of goals to have accomplished by the end of this year. In the meantime, I have limited myself to only eating meat once or twice a week and making vegetarian meals for the remaining days. If you are interested in trying some vegetarian meals here are some options that are easy and affordable for college students.

 

  • Spaghetti: Instead of adding ground meat or meatballs substitute it for a vegetable like broccoli. You could even substitute meat for garbanzo beans or chickpeas they are a great source of protein.

  • Veggie Burgers: There are many frozen veggie burger brands that cook easily and quickly. Add your favorite toppings and condiments with chips or fries on the side and you have a delicious and healthy meal.

  • Veggie Tacos: Slice up some peppers, zucchini, and sweet potatoes and roast them in the oven, this is your filling for the tacos. You can add salsa, guacamole, and sour cream on top.

  • Rice and Vegetables: There are so many ways to cook and flavor your rice. You can make fried rice with soy sauce and an egg. You can easily make coconut rice by adding coconut milk. Or for something spicy add some curry and turmeric to your rice. Whichever rice style you choose, cook some simple veggies on the side. This is an easy and quick meal that doesn’t disappoint.  

  • A veggie sandwich: Contrary to popular belief a sandwich can be delicious without meat on it. Next time you're at Wawa order your sandwich with veggies and toppings and get it toasted. You’ll have a delicious veggie panini.

  • Chia Porridge: (featured in the picture below) If you are tired of the traditional breakfast foods try chia porridge. Take ¼ a cup of chia seeds and let it soak for 15 minutes in almond milk (or your milk of choice). You can add cinnamon, cacao powder, spirulina, or any of your favorite fruits on top for flavor. This is a great and healthy way to start your day!chia seeds and banana

Avocado Toast: My ultimate favorite. Toast your favorite bread and add sliced or smashed avocado on top with salt and pepper. If you’re feeling fancy spread some pesto sauce on your toast before adding the avocado. This is such an easy option when you’re on the go.
